I know, what could be better that a steaming plate of fries, gravy and cheese curd? Fries, gravy, cheese curd and bacon, that’s what! Throw in some fresh shallots, chilli, and a splash of roasted bone marrow and duck gravy, and we turn this popular French-Canadian dish into a something sublime.
Breakfast at my House
Weekdays/Weekends in my house are busy. I am the type of person who wakes up, instantly starts the coffee pot and my stomach is growling. I NEED food, something in my stomach is saying, “you’ve been sleeping for too long and it’s time to fuel that body” Although, I’m not the type of person to go super gourmet on breakfast, as I spend my entire morning routine accomplishing my to do list – workouts, dog walks, runs and house cleaning, I don’t feel as if I prioritize eating a full breakfast. This is why I prepare ahead of time for moments like this. Sunday’s though, I try to slow down and create different breakfast recipes for Brandon and I to enjoy. This way we take one morning to have delicious pancakes (banana pancakes of course) and I actually consume my coffee at a warmer temperature than weekdays. So I want to share with you a few of our go-to breakfast options for those busier mornings, or those nice “take your time” mornings – if they truly exist?

Easy Banana Pancakes – I call them easy, cause they require little to no effort.
Ingredients:
– 2 (ripe) bananas, mashed
– 2 eggs, beaten
– 1/2 cup organic oats
– *1 tsp cinnamon
– 1 tbsp coconut oil * or desired oil/butter of choice
My Fav Toppings:
Organic Maple Syrup
Bananas
Blueberries
Strawberries
Instructions:
1. In a medium sized bowl, mash your two ripe bananas.
2. In a smaller bowl, crack two large eggs and use a fork/whisk to beat well.
3. Place beaten eggs into your mashed banana bowl and whisk together, fold in your 1/2 cup of organic oats until a nice batter forms.
4. If you are adding cinnamon to your batter, add this in last and stir in, until well combined.
5. Place a large frying pan on medium heat, add your coconut oil to the pan. Using your flipping utensil ensure the entire pan is oiled to avoid batter sticking to the pan and unable to flip.
6. Place desired pancake sized batter amount to the pan and let cook.
7. When the sides begin to form an outer edge, you know it’s the perfect time to flip! (about 1-2 minutes per side) Some people like their pancakes a bit more well-done or crispy than others, so absolutely go off of your own personal preference.
8. Allow the pancake to cook for an additional 1-2 minutes, until, once again your desired cook preference is complete!
9. Place cooked pancake on a plate, top with your favourite toppings and enjoy!
This batter normally provides about 4-5 pancakes, should you want larger pancakes, that’s where more batter will be used, so please use to your discretion.
Should you wish to amp up the pancake even more, play around with your toppings, maple syrup is a given, but sliced strawberries, blueberries, raspberries and hazelnut spread can be a crowd pleaser.
*This is optional, if you wish to add additional flavours, by all means please do so!
